Origin
The Mojito's history is genuinely contested — some accounts trace it to 16th-century privateer Francis Drake's crew, though most historians treat this as legend. Its modern form is generally placed in Havana bars in the early-to-mid 1900s, popularized further by Hemingway's association with El Floridita.

Ingredients
- White rum2 oz
- Fresh lime juice1 oz
- Simple syrup0.75 oz
- Mint leaves8–10, muddled
- Soda water~2 oz, to top

Method
- Muddle mint gently.
- Add rum, lime, syrup.
- Fill with crushed ice, swizzle or short-shake.
- Top with soda water, garnish with slapped mint sprig.

Notes
Over-muddling turns mint bitter fast. No crushed-ice machine? Cracked cubes work. Pairs well with light seafood.
