Origin

Created by bartender Sam Ross at Milk & Honey in New York around 2005. Unlike most cocktail origins, this one is well-documented and not seriously disputed.

Flavour Profile

Good for someone who already likes whiskey and wants more complexity than a Smash. Honey and ginger lead, a smoky Islay float hits last. Not a beginner's first Scotch drink.

Ingredients

  • Blended Scotch2 oz
  • Fresh lemon juice0.75 oz
  • Honey-ginger syrup0.75 oz
  • Peaty Islay Scotch0.25 oz, for float

Method

  1. Combine Scotch, lemon juice, honey-ginger syrup with ice.
  2. Shake 10–12 seconds.
  3. Strain over a large cube.
  4. Float the Islay Scotch over the back of a spoon.
Stirring the Penicillin

Notes

Make honey-ginger syrup with equal parts honey/water and fresh ginger, strained. No float Scotch? The drink still works, minus the smoke on the nose. Pairs well with aged cheese.
